Roasted Pumpkin Seeds

October is one of my favorite times of the year. Leaves change, the air gets crisp, warm drinks are craved, and we get to carve pumpkins. I love watching Hocus Pocus and drinking hot chocolate. But, I confess, I usually have a salty tooth over a sweet tooth. Compared to my wife who basically has a sweet tooth 24/7 :D.

 

We carved pumpkins last week so we saved the seeds and roasted them.

 

 

Roasted Pumpkin Seeds

Preheat the oven to 350º F

Mix seeds, enough olive oil to lightly coat the seeds, garlic powder, salt and pepper in a bowl.

Spread the seeds on a parchment paper lined baking sheet and bake for 20-30 minutes or until seeds are lightly browned and roasted to your preference. You will have to stir the seeds about halfway through.
